Food..fabulous food!

A couple of fave recipes.. for M2 fans Chris & Karen (as requested)

Jen’s Chicken

Boneless, skinless chicken (breast or thigh) enough for you & your friends
Garlic
Onion
Olive Oil
1 can chopped tomatoes
Quarter cup chicken stock
Fresh herbs (basil, thyme, oregano) if you have none fresh dried will do
Pepper
Olives (if you like them)
Fresh chilli (if you want a little spice)
Fresh Parmesan
Heat olive oil in a large skillet over medium heat, add anchovies and stir into oil until melted. Add the garlic, turn heat to low and saute for a couple of minutes. Stir in the tomatoes crushing them up, then stir in stock. Season with a little black pepper, olives, chili and fresh herbs then simmer a few minutes.

Place chicken into covered oven dish and cover with sauce.
Cook covered at 200 for 60-90 minutes (depending on the size of the chicken pieces
5 minutes before serving cover with a very thin layer of Parmesan and melt under the grill (2-3 min max)

Mesclun and Bean Salad

Fresh mesclun salad leaves
1 cup (roughly) broad beans (peeled) you can buy these frozen at most good supermarkets
1 cup (roughly) edamame bean you can buy these frozen at most good supermarkets
Handful fresh mint
Pea shoots
Lime
Shredded Parmesan cheese
Defrost beans and remove the skin from the broad beans
Chop mint roughly & mix in lime juice
Pour over beans and chill in fridge
Mix mesculan & pea shoots and add bean mix
Shred cheese and mix in to the greens

Dressing
Zest and juice of one lime
1 T. finely chopped fresh mint
1 T. finely chopped red onion
2 T. Balsamic vinegar (or vinegar of your choice)
1T. light flavored oil (light olive oil, rice bran oil, sunflower oil)
